Summary of Proposal:
• The proposed amendments would create a new wine category for Skin Fermented White Wines.
• It would define and recognize production and labelling standards for wines made from white or pink skinned grape varieties that are produced using methods typical for red wines.
• The process of fermenting on the skins gives the wine a distinct character and weight, usually with more tannins and less emphasis on fruit.
