Summary of Proposal:
The proposed amendments would remove inconsistencies among the three categories of sparkling wines and support consumer expectations.

The three categories of sparkling wines would become:

1. Base category of sparkling wine - to replace the Aromatic category. For this category, there would be no production restriction on grape varieties or aging. However, labelling would be restricted to only "VQA Ontario" (viticultural areas and sub-appellations would not be allowed) and the method of production could not be declared unless the wine meets additional requirements specified for each method (i.e., traditional, classical, fermented in the bottle, cuve close, charmat).
